High Calorie Snacks for SPECIAL NEEDS CLIENTS
These snacks are for use in Bert Seelman’s dietary programs as directed, only for designated persons.

High PROTEIN high calorie snacks
15 Hard boiled eggs or 5 – 6, 6oz. cans water packed tuna or salmon or 16 oz. boiled chicken or turkey
5 slightly rounded tablespoons, “safflower” oil mayonnaise ( make sure no canola)
3 large finely grated carrots
3 large stalks celery finely chopped (makes approx. 4 – 5 snacks)
1 – 2 red, orange, or green bell peppers finely chopped
½ med to large yellow onion finely chopped
If desired add chopped green chilies, jalapenos, pepper, and other various herbs
Mix well and let set over night
Place in small Tupperware containers or glass containers for “quick snacks” to be eaten quickly
DO NOT EAT WITH ANY STARCH, can be eaten with or on vegetable sticks, or on leafy vegetables
High calorie STARCH snacks DO NOT EAT PROTEIN WITH THESE SNACKS
3 – 4 cups cooked brown rice or 3 – 4 cups boiled mashed potatoes or 2 ½ – 3 ½ cups cooked beans mashed
Add “guacamole” made from avocados 2 – 3 mashed with lemon juice, garlic, green onions, mashed tomato’s
or (makes approx. 3 – 4 snacks)
6 – 8 tablespoons of clarified butter or butter if allowed or 6 – 8 tablespoons oil
If desired add chopped green chilies, jalapenos, pepper, and other various herbs
Mix well and let set over night
Place in small Tupperware containers or glass containers for “quick snacks” to be eaten quickly
DO NOT EAT WITH ANY PROTEIN, can be eaten with or on vegetable sticks, or on leafy vegetables.
